Best vegan breakfasts in Las Vegas 2023

I’ve always been a firm believer that breakfast is the most important meal of the day. So ever since going vegan, I’ve made it my mission to find the most indulgent, delicious vegan breakfasts wherever I go – and Sin City was no exception! Especially as Las Vegas is known as a foodie paradise and one of the best cities in the US to indulge in gluttonous, Insta-worthy food! Here is your guide to the best vegan breakfasts in Las Vegas.

Tableau at the Wynn Hotel on the Las Vegas Strip

The Wynn Hotel is a beautifully modern and luxurious addition to the Las Vegas Strip and has a fond place in my little vegan heart!

Not only does the Wynn Hotel offer one of the best vegan breakfasts in Las Vegas, you can enjoy a fine dining experience at the same time!

Inside their restaurant, Tableau, you’ll find a lovely menu built on seasonal ingredients for market-fresh breakfast, lunch and brunch dishes.

However, it’s their veganised pancake breakfast that makes them stand out in my opinion!

Vegan breakfast options

In 2018 when I first visited, the only two vegan options that Tableau had were the avocado toast and blueberry pancakes. However, now in 2023 vegan breakfast options at Tableau have expanded to include:

  • Vegan scramble – JUST EGG™, tempeh, spinach, mushrooms, caramelised onions, chives, cashew mozzarella, oven dried tomato, Tableau potato and a choice of toast
  • Steel cut Irish oatmeal – golden raisins, brown sugar, almond milk and maple syrup
  • Pancakes whole wheat pancakes with pickled blueberries, blueberry citrus butter and maple syrup.
  • Avocado toast – avocado on wheat toast with prosciutto de parma and arugula

Now, as any self-respecting vegan will tell you, I love me some avocado on toast…but the chance to try Tableau’s spin on vegan pancakes was just too good to pass up!

Their vegan pancakes are still some of the best I’ve ever had. Which is why their place in this ‘best vegan breakfasts in Las Vegas’ post is secured!

The blueberry whole wheat pancakes come as a traditional American pancake stack and have a lovely fluffy texture. The blueberry parfait topping gave the pancakes a really nice tangy and fruity taste.

They are very hearty and veeeeery tasty! Just make sure you let your waiter know you’re vegan so they don’t add any eggs or butter to the pancakes.

For drinks I kept it simple with a glass of juice and cup of coffee. But Tableau do a load of healthy juices and smoothies which will compliment any breakfast choice.

My favourites were the ‘Red Deliciousness’ made with fuji apples, bell pepper, pomegranate, beets and lime. And the ‘Purify’ made with honeydew melon, green apples, kale, spinach, cayenne pepper and organic agave.

Something that makes Tableau’s breakfast experience that bit “extra” is the fine dining aspect.

I sometimes feel a bit out of place in fancy restaurants like this – especially when it’s only breakfast! But I loved the elegant feel of the restaurant with its sparkling chandeliers, bright coloured walls and quirky artwork.

As you’d expect with a high-end restaurant, Tableau unfortunately has high-end prices.

However, the portion sizes are so large, this breakfast kept me full all day until dinner so in the end I was able to save money by skipping lunch!

Vegenation in downtown Las Vegas

Vegenation based in downtown Las Vegas is an absolute vegan food gem! It’s 100% plant-based with a friendly and chilled, alternative vibe.

It was by far my favourite place to eat during my entire trip and definitely does the best vegan breakfasts in Las Vegas!

What I also love about this restaurant is how it promotes itself as community-based and in their own words: “on a mission to lead a food revolution”. Using fresh street food grown vegetables from local school garden programs, community gardens and freight farms.

Vegenation serves food all day and night but it is their breakfast selection that really makes them stand out!

Vegan breakfast options

Vegenation serves a wide range of vegan breakfast choices from the more basic superfood porridge and avocado toast, to the more indulgent waffles and stuffed French toast.

Their vegan breakfast menu is rather extensive (hallelujah!) and includes the following:

  • Super food porridge – warm quinoa with goji berries, cacao and coconut
  • Par-fabulous – cacao, granola and fresh fruit layers with chia seed pudding
  • Waffle – crispy waffle with blueberry sauce
  • Tofu scramble – roasted vegetables, house spiced tofu, breakfast potatoes and a side of corn tortillas
  • Perky potion – superfood coffee blend with jasmine green tea, cacao, hemp seeds and coconut oil (sweetened by agave)
  • Food not bombs bowl – house spiced tofu, black bean chilli, breakfast potatoes, topped with cheese, avocado, chipotle cream and served with corn tortillas
  • Badass vegan burrito – black beans, grilled vegetables, breakfast potatoes and tofu wrap
  • Stuffed French toast – French toast with vegan cream cheese and berry jam
  • Biscuits and gravy – warm biscuits topped with loaded sausage and mushroom gravy served with braised collard greens
  • Avocado toast – topped with mashed avocado, vegan cheese and pico de gallo

For drinks it’s not just your standard underwhelming morning coffee or tea at Vegenation, but a selection of fresh juices and smoothies too.

I opted for a fresh juice made with orange, carrot, ginger, pineapple and a dash of turmeric and it was so refreshing!

It also helped to balance out the rather indulgent (but utterly delicious!) breakfast I ended up picking.

Vegan stuffed French toast

When I visited Vegenation, I went alllll in, ordering the stuffed French toast with vegan cream cheese and berry jam and a fruit bowl.

I had never had cream cheese that tasted as good as this, (even b.v – before veganism!). Combined with the berry jam, it was the perfect filling in the already sinfully delightful French toast.

In addition to the incredible food, I really love how distinctive Vegenation’s brand identity is. The restaurant decor really encapsulates this with vegan inspired imagery and artwork.

I especially love their quirkier decor aspects such as the chalkboard at the entrance with hand-written phrases such as, ‘vegans baby!’, ‘vegans burgers are for life’ and ‘food not bombs’.

Vegenation is also a great place to eat if you’re looking for something more affordable than Tableau. I found their food also kept me full until dinner time which was more money saved on food!

I can’t wait to return and add more best vegan breakfasts in Las Vegas to my list! Let’s just work our way down the Strip shall we?
